Winter comes with the footy season we have NRL/AFL games and State Of Origin, while most of us take the easy option and order fast food or make hot dogs, I opted for home made pizza.
Beef stroganoff
As I rarely eat carbohydrates of a night I wanted to make a pizza minus those nasty carbs and extra calories.
As I'm called the Google queen by all who know me well I went on a Google quest to find a cauliflower crusted pizza but tweaking a few ingredients to suit the whole family.
Cauliflower Pizza
Ingredients for base
- One whole cauliflower
- One egg
- 1tbs Oregano
- 1tbs Basil
- 1/2 cup of mozzarella
Ingredients for topping
- Passata
- Baby spinach
- Baby Roma tomatoes
- Capsicum
- Mushrooms
- Spanish onions
- Crumbled Feta
Process cauliflower in batches until is in rice consistency then squeeze out excess liquid as it can become quite moist.
Mix the base ingredients together then flatten onto pizza dish.
Put in oven on 180 degrees for around 10 minutes ensuring you don't burn crust just enough to cook slightly.
Then spread passata on base and load with whatever ingredients you wish to use.
Bake in oven until cooked making sure you don't burn crust though like I did slightly but still tasted fabulous!
A great topping is roasted garlic pumpkin, feta, baby spinach and Spanish onions yummo!
