The government believes the additional time will give residents more time to use all their vouchers eating out or trying a new activity this winter.
And, with the school holidays just around the corner, the announcement is good news for families across the region to take advantage of free entertainment and dining.
Member for Myall Lakes, Stephen Bromhead said the stimulus had played a valuable role supporting local businesses as well as reviving consumer confidence.
"This program is win-win for communities - it provides local businesses with much needed stimulus and families with in-pocket relief," Mr Bromhead said.
"People of all ages and walks of life are giving them a go and we don't want anyone to miss out," he said.
"This extension will ensure everyone has a chance to use all four of their vouchers, which I'm sure will be particularly handy in the school holidays."
The Dine & Discover initiative by the NSW Government means locals can continue to support local businesses including owners and staff who work in cafes, restaurants, pubs, wineries, cinema, performing arts operations, amusement parks, recreational activities, outdoor adventures and travel tours.

Every adult in NSW is eligible for four, $25 vouchers worth $10 to spend across 14,000 participating businesses.
"It's not too late for businesses to register and customers are encouraged to sign up and spend their vouchers before they expire on July 31, 2021."
Forster Tuncurry Business Chamber president, Megan Lewis echoed Mr Bromhead's advice urging the business community to take advantage of the offer if they haven't already done so.
"The Dine & Discover initiative by the NSW Government means locals can continue to support local businesses including owners and staff who work in cafes, restaurants, pubs, wineries, cinema, performing arts operations, amusement parks, recreational activities, outdoor adventures and travel tours," Ms Lewis said.
"We encourage every eligible business owner to sign up and if they have any questions they can contact the chamber at info@ftchamber.com.au.
The vouchers had been due to expire on June 30.
