Well that may not be the case at the moment, but what excuse do we need to cook a sweet potato bake.
I don't know about you but for me I love to cook in winter, however during the colder months we all tend to go for the unhealthy treats or foods for comfort.
We don't necessarily have to do that as we can still cook healthy, delicious meals for our families.

Potato bake and steak Dianne is a favourite in our home and my son is always asking me to make this for him.
So I was determined to find a healthier version for our family favourite so decided to experiment and this is what I came up with.
Sweet Potato Bake
Sweet potatoes sliced thinly
Mushrooms sliced
Spanish onions diced
2 x Phillidelphia Cream Cheese (cooking cream 60pc less fat)
2 tbs minced garlic
1 packet French onion soup mix
1 packet cauliflower rice (I usually buy this at Woolworths already made where you get the salad mixes)
Himalayan salt/pepper
Method
1. What I did was layer the sweet potato, mushrooms and onions in a tray.
2. Mix the Philly cream cheese, salt, pepper, garlic and French onion soup mix together
3. Pour sauce on top then I placed the cauliflower rice on top baked in oven for an hour.
