“My husband said let's have a barbecue and I said 'eave it to me I know exactly what to cook,” Karen said.
I love my food and refuse to eat just boring old meat and vegetables, there are so many ways that you can spice up a healthy family meal that even the children will love, she said.
Why not involve the children in helping to assemble these delicious chicken kebabs, this will encourage the children to taste what they helped you make.
Karen says, preparing healthy meals doesn't have to be boring, tasteless or even expensive.
If you have leftover chicken or vegetables after prepping the kebabs you can then make a stir fry the following night which is what I often do.
Chicken Kebabs
- 3 Chicken breast
- 3 Capsicums
- 2 large Spanish Onions
- Whole Mushrooms
- 3 large Zucchinis
Marinate
- 3tbs mince garlic
- 1tbs parsley
- 1tbs basil
- 1tbs oregano
- 1tps Dijon
- 1 cup water
Method
- Cut up chicken, capsicums and onions into squares depending on what size you want but as I use whole large mushrooms and cut up my zucchinis large I cut them to fit match these ingredients.
- Mix up marinate ingredients put aside
- Stack mushrooms, onions, chicken, capsicums and zucchinis onto skewers
- Pour over marinate onto kebabs and marinate for one hour
- Cook on barbeque grill or fry until cooked.
- I serve as is and put 3tbs of Greek yoghurt mixed with cumin and paprika on the side to use as a dipping sauce, delicious.
